The allicin responsible for garlic’s pungent smell and flavor is also what contributes to its many health benefits: reducing blood pressure, increasing good blood cholesterol (HDL), boosting immune functions and more. In addition, garlic is rich in the antioxidant quercetin and vitamins A and C.

    I love garlic and use it minced or powdered in just about all my main dishes. It’s great on a toasted slice of sourdough bread with sliced avocado and tomato. I’m surprised you didn’t mention the Gilroy Garlic Festival, Hemi. It’s held during the last week of July every year. I hope to make it some day.

      Garlic scapes are a delicacy. I believe those are the stems? No idea about onions.
