Here’s a fun brunch idea for a spring weekend – Yogurt Salad!

Yogurt is healthy. Raw veggies are too. Why not mix ‘em together and enjoy a hearty, healthy treat?

Yogurt Salad. 

Ingredients:

1 firm cucumber

1 tomato

1-2 fresh chives (bulb+stalk)

1 radish (optional)

1 container plain, lowfat yogurt (6-8 oz)

 Instructions:

Dice cucumbers, tomatoes, radishes, and chives into small cubes.

Place in a bowl and add yogurt.

Season with salt and pepper.

Mix.

Notes:

1. You can use regular or greek yogurt, depending on the type of consistency you’re looking for. If you need more liquid, add an extra tomato.

2. Optionally add a dash of heart healthy olive oil.

3. Enjoy anytime of day with a freshly baked loaf of bread (whole wheat of course).

    When I first saw the picture, I thought it was a Jell-O salad (cubes of Jell-O with whipped cream)! I was seriously concerned about this blog. :)

    I use 2% Greek yogurt as a mayo substitute in sandwiches, mixed with avocado and sliced fruit as a pancake topping, stirred into hot cereal for a creamy texture, and as a morning snack with chopped fresh/dried fruit and a wheat/oat bran mix. Oh, and as a base for homemade salad dressing. Good stuff!

    Mix Greek yogurt with pesto sauce for a delicious dressing for grilled vegetables & chicken wrapped in flatbread or in a pita.

    Where I come from we make ”cold soup” from kefir or runny yougurt, pickled sheredded beetroot fresh cucumbers, cold boiled potatoes, sometimes some raddishes or chopped egg, with a bit of mustard for seasoning and loads of dill and parsley and sometimes some chives, spring onions or mint. Just mix it up to a soupy thichness, chill and enjoy nutritious meal that has a color like it just came from My Little Pony show.
