Have You Had Yogurt Salad?

Yogurt is healthy. Raw veggies are too. What happens when you combine them?

Yogurt Salad.

For those of you who don’t want to add calories and chemicals (i.e. commercial dressings) to your salad, but still need to smother the tomatoes, here’s a quick and easy fix.

  • Dice cucumbers, tomatoes, and chives into small cubes. (Radishes work great as well.)
  • Place in a bowl and add a cup or two of plain yogurt.
  • Season with salt and pepper.
  • Optionally add a dash of olive oil.
  • Mix.
  • Enjoy for breakfast, lunch or supper, with a freshly baked loaf of bread.

    Middle Eastern style: no tomatoes or chives. Just cucumbers, garlic, salt, and, of course, yogurt. It’s great over basmati!

    I enjoy it as a substitute for ice cream. Plain yogurt, brown sugar or maple syrup, a few nuts (coconut is also a good addition), and some quick oats for texture…yum!

    We love to mix a bit of plain yogurt (perhaps 1/3 cup) with some agave nectar or honey, then stir it onto a bowl of frozen mixed berries. The yogurt sort of freezes onto the berries and it is a delicious and healthy frozen dessert.

    I really encourage people to not only buy plain yogurt, but to look for a local producer. In our area we have White Mountain which comes in jars. It is 10 times tastier than the ones made by the mega-companies.

    Yogurt rice.. another fun way to use plain yogurt. It is a light refreshing dish full of probiotics. Great recipe for lactose intolerant folks and folks whose tummies are acting up or just want something simple to eat.
